Chicken gyros with tzatziki sauce are an easy and healthy meal. A little bit of prep earlier in the day makes dinner come together quickly at meal time.
Have you ever heard the theory that food is the same across cultures, with different names and some different seasoning? A gyro is basically the equivalent of a fajita, but with greek seasoning, and served in a pita instead of a tortilla.
(Not buying the theory? Pizza = quesadilla. Enchilada = cannelloni. Pulled pork = carnitas. Chili = picadillo. Salsa = ketchup. Pesto = chimichurri. Hot dog. . . well, you’ve got me on that one. )

Marinate the chicken
The key to this delicious chicken gyro with tzatziki is marinating your chicken. You need at least two hours, but better if you give it 6 or 8. The marinade is delicious.
Combine the garlic, white wine vinegar, lemon juice, olive oil, greek yogurt, oregano, and salt and pepper in a ziplock bag. Add the chicken. Refrigerate.
Make the Tzatziki
Grate washed but unpeeled cucumbers on a cheese grater. Place on a paper towel and press to absorb extra liquid. You could also let it sit in a colander for a few minutes, and squeeze.
Combined grated cucumber, yogurt, lemon juice, olive oil, garlic and salt and pepper.
Make this an hour or two before serving, to let the flavors develop.
Make the salad
Chop cucumbers, tomatoes, red onion and parsley, and combine with red wine vinegar and salt.
Grill the chicken
Grill your chicken, or if preferred you could broil it. In either case, you want a nice char on the meat.
Let the meat rest, then slice.
Assemble your gyro
In a soft fresh pita, combine the tzatziki, meat and salad.
