Social distancing. Quarantines. The threat of coronavirus has made our world a different place than it was a month ago. As I write this, the governor of Ohio is announcing that all restaurants and bars will be closed indefinitely.
How we feed our families has to change for the next few weeks. We don’t have the luxury of going out to a great restaurant, or running to the grocery store every day. I’ve found I’m planning for a week in advance. I’m looking for soups and stews, and recipes where I can use frozen or canned ingredients if necessary.
We realized that some of our favorite posted recipes might be helpful during this time.
Crockpot Taco Soup: This is made with many canned ingredients, and ground meat (could be turkey, chicken or beef). You could definitely use frozen ground meat.
I’ve Got a Feeling I Need Some Black-Eyed Peas on New Year’s Day: Not just for New Year’s.
No harm, just fowl. . . simply the BEST chicken noodle soup: A big pot of this will get you through a few meals. Plus, it’s very comforting. I’m not promising it will cure what ails you, but it might make you feel better.
Lettuce Enjoy a Yummy Chicken Dish! This delicious dish uses ground meat too, so you can make it with frozen meat out of your freezer. Don’t have fresh lettuce on hand? You could put it over rice, too.
Low-Carb Cauliflower Fried Rice: You can buy frozen cauliflower rice and frozen mixed vegetables, and then use fresh eggs and any left-over cooked meat in your fridge.
Instant Pot Ham & Bean Soup: Dried beans and peas are wonderful for this time when you may not have fresh ingredients on hand.
Split Pea Soup: Another easy dish using dried peas or beans.
Crockpot Chicken Chili — Zero WW Points: This is so easy, and so good. If you’ve got some frozen or fresh chicken breasts, you’re half-way there.
Comfort Food in a Jiff? This Bolognese Doesn’t Disappoint! Make this in the instant pot, for a quick gourmet pasta. Again, using ground meat, which you may have on hand in your freezer.
Sloppy Joes…Nostalgic Comfort Food: Doesn’t everyone love a Sloppy Joe? Throw together this homemade version, and your whole family will be happy.
