After tasting the Original ChopShop’s Teriyaki Bowl, it was so fresh and delicious I decided to attempt to replicate it!
Fresh Ingredients
The fresh, simple ingredients made it relatively easy to come up with something similar. It included roasted vegetables, rice, grilled chicken, avocado and teriyaki sauce.

I’ve never made my own teriyaki sauce, but it was easy and very tasty.

Rice
I made simple white rice because I wanted the family to love it and wasn’t certain everyone would go for the brown rice, even though it is allegedly healthier. You could also use mashed sweet potatoes, quinoa or cauliflower rice.
Veggies
I roasted broccoli, cauliflower and carrots. I sautéed mushrooms just because I prefer them to roasted mushrooms. I think roasted tomatoes would be good, too.
I sliced avocado, one half for each serving.
Protein
We grilled strip steak and I pan sauteed tofu for my vegetarian daughter. This dish would be terrific with chicken, shrimp or salmon as well.
Assembly
I placed a large scoop of rice in half of the bowl, a large serving of veggies in the other half. I topped the rice with the protein and placed the avocado in the center, on top. I then drizzled a generous serving of teriyaki sauce over everything. ChopShop garnishes with sesame seeds, which I forgot, but is a nice touch!
Make Ahead
I made everything at one time, but it would make sense to make the teriyaki sauce and rice ahead, plus you could roast the veggies in advance. It’s also great left over. We had bowls again for lunch a few days later and they were delicious!
