Try this Healthy Fish Recipe… Perfect for Lent

Healthy fish recipes are welcome in our house anytime, but especially during lent! This recipe calls for grouper, but you could use any mild white fish and the flavors would balance well. Added bonus… it’s easy and pretty!

The Dressing

The dressing/sauce gives much of the flavor to this dish and has an Asian flare to it.  It includes ingredients like soy sauce, sake, rice vinegar and mirin.  It’s easy to make, as you just throw everything into a blender.

The Veggies

Cucumbers, carrots and daikon make up the vegetable portion of this dish.  The recipe suggests using a mandoline to slice the cucumbers; I sliced them thin by hand.  I also julienned the other half of the cucumber and the carrot by hand.  My grocery store didn’t have daikon, so I doubled the carrots. You could use a variety of fresh, raw veggies.

Shallots & Garlic

I loved this… you saute the shallots and garlic until they are brown and kind of crunchy; then drain them on paper towels.  These have really nice flavor and will garnish the dish. Using the same pan/oil to cook the fish, the flavor of the shallots and garlic blend with the fish.

Assembly and Finished Dish

Once everything is ready, you start with a dollop of dressing and arrange the cucumbers over it.

Then you add the seared grouper, the julienned veggies, a little more dressing, the shallots/garlic, sesame seeds and cilantro (I didn’t use either) to finish the presentation.  It’s a pretty and colorful dish.

Delicious

We loved this dish and from start to finish, it took me about 45 minutes.  Living in Florida on the east coast gives us access to fresh fish.  Our grouper had just been caught and we watched the expert filet it. This recipe is a keeper for us! Bon appetit!
