I absolutely love Cacio e Pepe and always thought it was too fussy to make.  Well, if you have a few simple ingredients and 30 minutes, give this a try.  I promise it won’t disappoint!!!

You can find the full recipe in the link at the bottom of this post.

Simple Ingredients

Pasta, freshly ground pepper, butter, olive oil, freshly grated Parmesan, freshly grated Pecorino Romano and Kosher salt.  That’s it!

A Few Easy Steps

While the pasta is cooking in boiling water, toast the ground pepper over medium heat until fragrant. Add four tablespoons of butter and four tablespoons of olive oil until the butter has melted.

Add the drained pasta plus one cup of reserved pasta water.  Add one cup of Parmesan and one cup of Pecorino Romano.  Toss to coat and season with Kosher salt.  Add 1/4 cup of reserved pasta water and a tablespoon of butter.

Transfer to a platter and garnish with ground pepper and Pecorino Romano cheese.  Add a simple salad, crusty bread and a glass of wine!  Ready to serve!
