I’ve heard all of the hype about the Jennifer Aniston salad and finally decided to find out for myself if the excitement was warranted!
I don’t know if she really ate this salad for lunch most days during the ten years of filming Friends, but I don’t think it really matters because the salad is delicious. I followed the recipe exactly except that I omitted the feta.
What’s to Love
- It’s a great main course salad by itself and would also be great with chicken, fish, tofu, etc.
- A healthy choice with protein, lots of fresh herbs, healthy fat and minimal carbs;
- Convenient to make, I had all of the ingredients with the exception of the quinoa. We grow mint and parsley and have an abundance of it right now, which made this an easy choice;
- It’s great as a leftover and can be made ahead. It doesn’t get soggy; it just gets better!
What’s in it?
There aren’t many ingredients and you can easily swap things our or add to it!
It’s super-easy to make and it’s light. You could switch up the herbs (I will try basil and parsley the next time,) swap the chickpeas for black or cannellini beans, swap the feta for goat cheese or parmesan, add avocado (although it wouldn’t save as well,) and even swap the quinoa for another grain like farro.
My daughters were the test tasters and they both loved it.
