Cold, dreary days call for comfort food, and this Bolognese recipe made in the instant pot doesn’t disappoint! Start to finish, this delicious dish can be ready to serve in less than 90 minutes. The link to the full recipe (from Amanda Biddle) is at the bottom of this post.
What is Bolognese?
Bolognese is an Italian meat sauce named for the region from which it comes: Bologna. It can be made with any combination of beef, pork and pancetta, and finished with milk or cream. While recipes vary, you’ll typically see meat, wine, stock and dairy included.
How is Bolognese different than Spaghetti Sauce?
Spaghetti sauce is typically a tomato sauce while Bolognese is primarily a meat sauce with some tomato. This particular Bolognese recipe has more tomato than many because we like a little more tomato in our Bolognese.
Bolognese is considered richer and heavier than spaghetti sauce and is therefore served over a heavier pasta like fettucine, the idea being that the thick sauce blends better with wider-shaped pasta.
Use the Instant Pot to dramatically reduce cooking time
Start to finish, you can be serving up this sauce in under 90 minutes. You can quickly brown the meat and saute the vegetables.
Once this step is complete, you dump everything in the pot, switch to the pressure cook function and set the time for 20 minutes.
While the Instant Pot is working its magic…
Put the water on to boil for the pasta and make a salad. Preheat the oven for bread if you’re going to include it in your meal.
