A healthy black bean soup with ingredients I already have?  Yes, please!

Tired of Cooking

I usually love to cook, but I admit I am sick, sick, sick of it.  I’m probably more sick of the clean up than the actual cooking. I have the time to do it but unfortunately I don’t have many of the ingredients needed for recipes I would like to try.  So I’m trying to find options that will use ingredients I already have. This black bean recipe (link at the bottom of this post) fits the bill!

Instant Pot Rocks

I have to say I love the Instant Pot.  This recipe is perfect for it because you can saute in the pan, dump everything into the pot, change the setting to pressure cook and you’re good to go.  It amazes me that you can use dry beans and whip up a delicious soup from start to finish in 90 minutes.

Get Creative with Toppings

So many options to top this healthy, yummy dish.  Sliced avocado (I bought a bunch at varying levels of ripeness), scallions, sour cream, cilantro (if you like it), hot sauce, chopped tomatoes, jalapenos… whatever sounds good.

Use the Immersion Blender

The immersion blender is key in that it allows you to get the soup to the exact consistency you like.  Without it, the soup is very brothy.  Blending half of it thickens it enough to feel a little more hearty.
